So it’s strawberry season here in Thailand, which means fresh and dried strawberries are widely available. I bought some while with a friend going to Pai to chill for a weekend. We took the bus, which cost about 150 baht a seat, but I’m pretty sure the driver was determined to make us deathly ill. While at a rest stop, trying to become un-nauseated, I bought a container of dried strawberries and they’ve been sitting in my fridge since.
Fast forward to now. I bought Quinoa (which I still don’t know how to properly pronounce), and have a container of it cooked in my fridge so I can use it for all these Pinterest recipes I’ve been pinning.
Tonight, I just wanted to cook something, and decided to try using ingredients on hand to make something new and exciting.
That’s how I got to strawberry quinoa breakfast bites. You too, can enjoy them with this recipe.
3 cups cooked Quinoa
1 cup milk
1 tablespoon coconut oil
1 teaspoon vanilla extract
3 tablespoons honey
Cinnamon (to taste)
Dried fruit, about 1/2 cup (or really, whatever you like; I don’t make the rules)
3 eggs, beaten.
Preheat oven to 350 degrees. In a saucepan, combine all ingredients EXCEPT eggs. Bring to a boil, and let bubble until mixture looks pretty thick. Take off heat, and add beaten eggs. Mix it up, and start scooping into a muffin pan. No need to grease it; these are obliging and will pop out easily on their own.
Bake for 20 minutes, or until smoke comes pouring out of the oven, in which case you might need to start over.
This recipe made 12 bites, along with two single serve silicone containers, but I used muffin tin liners, which meant I was able to put less batter in each container. Also, you can use whatever kind of fruit you want – next time, I might try using fresh apples. Let me know what you try and how it goes!
